This Thai Coconut Tofu will transport your tastebuds to Thailand! Organic tofu cubes in a sauce featuring lots of fresh lemongrass and creamy coconut. Great served over rice or noodles and sautéed veggies!
To thaw, place the frozen bag in the refrigerator for 8 to 10 hours (you can leave an unopened bag in the refrigerator for up to a week), or immerse the bag in hot water for 30 minutes.
Stove: For crispy tofu, separate the cubes and sauté in a skillet over medium heat for 5 minutes. Add the sauce in the bag and sauté with your favourite veggies.
Conventional or toaster oven: Cut your favourite veggies and place them on a baking sheet with parchment paper. Pour all the contents of the thawed pouch and mix together. Bake everything in a preheated oven at 420ºF for 20 minutes, stirring halfway through cooking.
Barbecue: Cut your favourite veggies and place them in a large bowl with all the contents of the thawed pouch. Mix everything together and then skewer the tofu and veggies. Place the skewers on a preheated grill, 2 minutes per side, and then drizzle some sauce over top. Heat the remaining sauce and use as a dip.black pepper.
